English Sourdough Crumpets

What you Need:
1 cup of discarded sourdough starter
3 cups of all purpose flour
1/2 cup of sugar
1 teaspoon of baking powder
1 - 1/4 cups of de-chlorinated water
Instructions:
Mix the ingredients in a large bowl until it forms a thick batter, like pancake batter only a bit thicker.
Lightly oil or butter a griddle on the stove. Set the griddle on low heat.
Half fill egg or muffin rings with the crumpet dough and let them cook on low heat until the top surfaces of the crumpets is dry. If the bottoms are getting too done and the top is not fully dry, you can remove them from the rings and finish them by baking them in the oven at 350 degrees f.
If bubbles are not forming on the tops of the crumpets as they cook, add a small amount of additional de-chlorinated water to the batter.
Notes:
Crumpets freeze very well and make wonderful breakfast sandwiches when topped with eggs, cheese and/or sausage.
